<p>Looking for a cool salad to fill you up this summer? Here&#8217;s a delicious recipe from my partners over at Prograde Nutrition for you.</p>
<p>Roasted Red Pepper Chicken and Avocado Salad</p>
<p>1 medium ripe avocado, peeled, pitted and sliced</p>
<p>1 tsp.  lemon juice</p>
<p>1 bag (10 oz.) torn romaine lettuce (about 10 cups)</p>
<p>2 cups  shredded cooked chicken</p>
<p>1 medium tomato, cut into wedges</p>
<p>1 small  cucumber, sliced</p>
<p>1/4 of a medium Vidalia or Walla Walla onion, chopped</p>
<p>½ cup Red Pepper</p>
<p>1/2 cup  Light or Fat-free Italian Dressing</p>
<p>¼ cup Parmesan Cheese</p>
<p>Directions:</p>
<p>Toss avocados with lemon juice in large salad bowl.</p>
<p>Add lettuce, chicken, tomatoes, cucumbers and onions; mix lightly.</p>
<p>Add dressing; toss to coat.</p>
<p>Sprinkle with parmesan cheese.</p>
<p>Serve immediately.</p>

<p>Whole wheat flour vs. Whole grain flour</p>
<p>The average person in America will walk down the bread isle in a grocery store and see that a lot of the breads to choose from say 100% whole wheat bread. They automatically think it must be healthy and grab a loaf or two and continue shopping. STOP!!! I wish I could stop them right there on the spot and explain what 100% whole wheat really means. Here are the steps to get 100% whole wheat bread:</p>
<p>1- Heat the grain so that the germ and the bran remove themselves and only the starch remains. The starch is ground and you are left with white flour which has no nutrition or food value.<br />
2- After going through this refining process the refinery then adds back a fraction of the wheat germ and adds a small amounts of synthetic vitamins, minerals, and a little fiber. This basically gives it some flavor and calories. Most of the time they don&#8217;t add back any of the bran (which gives it the darker color). In fact you will sometimes see in the ingredient list molasses, which they use to make a darker loaf. There you have it, 100% whole wheat &#8220;not good for you&#8221; flour.</p>
<p>Whole grain flour on the other hand uses the whole grain and doesn&#8217;t remove anything from it. It contains all of the germ and bran, along with many natural vitamins and minerals. It will have a little different texture and be slightly heavier than its counterfeit we mentioned above. But it will taste wonderful and your body will love it!</p>
<p>Now this next part may raise the eyebrows of some but I will stand by it until I am proven wrong. If you want to feel better and improve your health cut down on the amount of wheat and dairy products that you consume. Now I didn&#8217;t say to completely cut them out- just start eating less of them. Remember this is baby steps to your health. And of course you need to replace them with even better grains of which we will talk about shortly.</p>
<p>Now for a little background on this topic. America produces more milk and wheat than most countries. They tell you to drink tons of milk for strong bones and to eat your wheat. We will focus on the wheat here for a while and will get back to the dairy topic later. Wheat is a great grain but it has been abused in this country. It is in everything you eat- breakfast through dinner. From soy sauce, to chili, to crackers, etc. When you get too much of anything for an extended period of time you are bound to have problems. People that are becoming gluten intolerant is skyrocketing in this country. Gluten is the protein that is found in many grains. Most people are only intolerant to the gluten in wheat because it is in everything we eat and our bodies are screaming for a break. Some common symptoms are stomach problems (including digestion), allergies, weight gain, and headaches. Now everyone knows someone with one of the these problems, if not more than one. Not saying that the amount of wheat and dairy we consume is the only cause of these symptoms but they can and very often do. Moderation in all things!</p>
<p>When stacked up to the rest of the grains in this world we have to choose from, wheat lacks in many nutrients compared to others. The #1 grain in world can be argued but I give a slight edge to amaranth. It is a high energy grain and helps promote muscle health. It is packed with essential amino acids and contains a large amount of the lysine which most other grains lack. It contains one of the highest levels of protein and in a quarter cup contains 60% of the daily allowance of iron. Quinoa (pronounced keen-wah) I place as a very close second. Quinoa has three times as much calcium and twice as much phosphorus as wheat. It contains all the essential amino acids and is extremely high in protein. I could go on and on but spelt, kamut, millet, and barley are some of my other favorites. If fact, the whole grain flour I use for most everything in my baking contains spelt, kamut, brown rice, and oat groats. The ratio for this flour and many recipes can be found here on my blog. Go by some small amounts of these grains and start adding them to meals you are already making. They give meals different flavors and textures but primarily bring some awesome, needed nutrients into your diet you may not be getting. Have some cooked up in your fridge so that you have no excuse not to add them into a meal. Contact me for ideas and other recipes- I want you to feel better and to like what you eat!</p>

<p> In the previous lesson, I explained what the French do to<br />
 stay thin, and how stress reduction is an important part<br />
 of their &#8212; and any &#8212; healthy lifestyle.<br />
 We&#8217;ve been taught that following the USDA&#8217;s Food Pyramid is<br />
 another part of living well. But nothing could be further<br />
 from the truth.<br />
 Today, in my final lesson in this series, I&#8217;ll tell you why<br />
 the Food Pyramid is ineffective, and even dangerous.</p>
<p>   ==&gt;  The Protector Myth:  Why You Shouldn&#8217;t Trust The US<br />
        Government&#8217;s Nutritional Guidelines</p>
<p> You might not agree with certain aspects of our government,<br />
 but you probably trust it to deliver accurate nutrition<br />
 advice, right?</p>
<p> Not so fast.</p>
<p> Unfortunately, the US Department of Agriculture (the USDA,<br />
 government agency responsible for agriculture and food<br />
 policy) doesn&#8217;t have your best interests &#8212; or good health -<br />
 &#8211; at heart.</p>
<p> Instead, the USDA has created a Food Pyramid that&#8217;s meant to<br />
 serve this country&#8217;s big food companies &#8212; not the American<br />
 people!</p>
<p> It&#8217;s shocking, but true.</p>
<p> Government policy, including the USDA&#8217;s Food Pyramid, is<br />
 closely tied to the food industry. Follow the Food Pyramid,<br />
 and you&#8217;re apt to eat unhealthy foods that trigger weight<br />
 gain and disease.</p>
<p> Here&#8217;s why&#8230;</p>
<p> The Food Pyramid puts too much emphasis on refined<br />
 carbohydrates that raise blood sugar and animal-based foods<br />
 that are high in saturated fats, all of which add up to a<br />
 sluggish metabolism&#8230;and weight gain!</p>
<p> (Want a healthier Pyramid? Turn it upside down! You&#8217;ll get<br />
 more healthy fats and whole grains, and less red meat and<br />
 sugar. I explain more on page 71 of Ultrametabolism.)</p>
<p> There&#8217;s another problem with our government&#8217;s nutrition<br />
 guidelines.</p>
<p> By catering to the food industry, these guidelines help<br />
 promote the toxic sugars and fats that are found in nearly<br />
 every processed food out there.</p>
<p> Believe it or not, most Americans eat a diet that literally<br />
 fills them with toxins. Add in the toxic chemicals found in<br />
 supposedly safe beauty supplies, pesticides, and other<br />
 products and you can see how we&#8217;re swimming in a sea of<br />
 toxins.</p>
<p> But did you know that toxins also make you gain weight?</p>
<p> That brings me to my final Key.</p>
<p>   ==&gt;  Love Your Liver: Cleansing Yourself of Toxic Weight</p>
<p> Toxins are certainly not good for you. In fact, they<br />
 contribute to nearly every major health concern.</p>
<p> But toxins can also make you put on the pounds.</p>
<p> Sound crazy?</p>
<p> Well, it actually makes a lot of sense.</p>
<p> We&#8217;re overloading our bodies with toxins in the food we eat<br />
 and in the products we use every day. It&#8217;s your liver&#8217;s job<br />
 to protect you from these toxins by removing them from your<br />
 body.</p>
<p> The problem?</p>
<p> Your liver was designed for a much lighter workload than it<br />
 typically gets these days. It can&#8217;t filter out all the<br />
 toxins, and you end up storing them in your body fat to be<br />
 filtered later when your live has time to catch up.</p>
<p> But the problem is, you have a constant supply of new toxins<br />
 entering your system, so your body never has a chance to<br />
 catch up and the toxins continue to accumulate and damange<br />
 your body and metabolism.</p>
<p> It&#8217;s a complex process, but, in a nutshell, those excess<br />
 toxins slow your metabolism and you gain weight.</p>
<p> If you want to lose weight, and keep from gaining more,<br />
 you&#8217;ve got to limit your exposure to toxins and start<br />
 detoxifying your body.</p>
<p> Ready to detox?</p>
<p> Start breaking a sweat!</p>
<p> When you sweat, you lose mostly water, but you also get rid<br />
 of some fat, cholesterol, and toxins.  You know that<br />
 exercise can make you sweat. But why not try a sauna or<br />
 steam bath? Both can make you sweat AND help eliminate<br />
 toxins.</p>

<p>Previously, I told you how starving yourself and exercising<br />
 excessively can actually do more harm than good.</p>
<p> Have you ever tried counting calories only to give up in<br />
 frustration because the process was too confusing?</p>
<p> Today, I&#8217;ll explain why you shouldn&#8217;t bother to count<br />
 calories.</p>
<p> Instead of restricting calories, focus on burning more<br />
 calories automatically by increasing your resting metabolic<br />
 rate.  You&#8217;ll find out how to do that in just a second.</p>
<p>   ==&gt; The Calorie Myth</p>
<p> If you&#8217;ve ever been on a diet, you&#8217;ve probably been told<br />
 that you need to count calories to lose weight.</p>
<p> There&#8217;s just one problem:  calorie counting doesn&#8217;t work.</p>
<p> Accurately estimating the number of calories that you take<br />
 in each day is virtually impossible, not to mention<br />
 incredibly tedious and time consuming.</p>
<p> The good news? You don&#8217;t need to do it!</p>
<p> The truth is, if you&#8217;re eating the right foods, the right<br />
 way, there&#8217;s absolutely no need to count calories.  Your<br />
 body knows how much food you need for optimum health.</p>
<p> You see, not all calories are created equal.</p>
<p> Let&#8217;s take a 300-calorie doughnut &#8212; actually, let&#8217;s not!</p>
<p> That doughnut might taste good, but it will just give you a<br />
 quick sugar rush followed by an energy crash, leaving you<br />
 hungrier, sooner.</p>
<p> Now let&#8217;s look at a vegetable omelet with the same number of<br />
 calories. It&#8217;s delicious and leaves you pleasantly full,<br />
 with a steady level of energy for hours.</p>
<p> To that end, here is your UltraMetabolism tip of the day:</p>
<p> Eat these foods &#8212; and many others listed on page 279 &#8212; and<br />
 your body will naturally program itself to lose weight:</p>
<p> &#8211; Beans<br />
 &#8211; Whole grains<br />
 &#8211; Fresh (raw) fruits<br />
 &#8211; Vegetables<br />
 &#8211; Eggs<br />
 &#8211; Nuts<br />
 &#8211; Seeds<br />
 &#8211; Fish</p>
<p> Here&#8217;s why:</p>
<p> All of the foods that I just listed have one thing in<br />
 common: they either contain little sugar, a lot of fiber, or<br />
 both (not to mention they are jam-packed with healthy<br />
 nutrients).  That means that they won&#8217;t raise your blood<br />
 sugar quickly.  Instead, your body metabolizes, or burns,<br />
 them very slowly.</p>
<p> Your blood sugar helps control your appetite.  Raise it<br />
 quickly &#8212; by eating that doughnut, for instance &#8212; and<br />
 you&#8217;ll be starving in no time, ready for another doughnut.<br />
 But raise your blood sugar slowly &#8212; with fish, eggs,<br />
 vegetables, or other healthy foods &#8212; and you&#8217;ll stay full<br />
 for hours.</p>
<p> What&#8217;s the lesson here?</p>
<p> Different kinds of calories have very different effects on<br />
 the way your body metabolizes food and on how much weight<br />
 you gain.</p>
<p> Here&#8217;s the solution: Don&#8217;t worry about counting calories.</p>
<p> Instead, you should concentrate on choosing healthy foods -<br />
 foods that are packed with healthy nutrients and fiber.<br />
 Eating real, whole foods that fill you up means you&#8217;ll<br />
 naturally take in fewer calories.</p>
<p> But that&#8217;s not whole story.  Even with this lighter calorie<br />
 load, if you don&#8217;t do something to burn the calories you&#8217;re<br />
 eating, you&#8217;ll still have trouble losing weight.</p>
<p> Wait a minute!  In our last lesson, I warned you about the<br />
 perils of too much exercise.</p>
<p> That doesn&#8217;t mean you shouldn&#8217;t get any exercise at all.<br />
 Exercise is essential to keep your body healthy, especially<br />
 your bones and heart.</p>
<p> But exercise a lot and eat less, and you end up starving<br />
 yourself, which triggers you to end up overeating in the<br />
 end.</p>
<p> What&#8217;s a happy medium? At least 30 minutes of exercise, 3<br />
 times a week.</p>
<p> And there&#8217;s an even better way to burn more calories with<br />
 less exercise.</p>
<p> Here&#8217;s the shortcut: increase your resting metabolic rate.</p>
<p> That means you&#8217;ll be able to increase the number of calories<br />
 you burn ALL DAY LONG, even when you&#8217;re not exercising.</p>
<p> And that brings me to my next UltraMetabolism key:</p>

<p> Think exercise is your only way to burn calories? Most<br />
 people do.  If a little exercise is good for weight loss, a<br />
 lot of exercise must be better, right?</p>
<p> Not necessarily.</p>
<p> True, working out harder helps you burn more calories while<br />
 you are exercising.   But you don&#8217;t just burn calories when<br />
 you&#8217;re at the gym. In fact reading, cooking, watching<br />
 television, and even sleeping burns calories!</p>
<p> Wouldn&#8217;t it be nice if you could increase the number of<br />
 calories that you burn then, too?</p>
<p> Well, you can.</p>
<p> As I said earlier, you can do this by increasing your<br />
 resting metabolic rate.</p>
<p> This simple means how much in the way of calories you burn<br />
 by just sitting around, not actively doing anything.</p>
<p> We&#8217;ve got thousands of little energy factories in our bodies<br />
 called mitochondria.  If you can make your body make more of<br />
 those, and make the ones you have more efficient, you&#8217;ll<br />
 become a calorie burning powerhouse yourself.</p>
<p> How do you do that?</p>
<p> Well, remember the &#8220;wind sprints&#8221; your high school gym<br />
 teacher used to make you do?  You might have dreaded them,<br />
 but they&#8217;re actually an easy, effective way to burn more<br />
 calories.</p>
<p> It&#8217;s called interval training &#8212; short bursts of very<br />
 intense exercise followed by longer periods of lighter<br />
 exercise.  On page 169, you&#8217;ll find specific, easy-to-do<br />
 interval training programs for both beginners and more<br />
 advanced exercisers.</p>
<p> Believe it or not, this simple technique alone can increase<br />
 your fat-burning capacity-even while you are sitting on the<br />
 couch!</p>
<p> Do it regularly and you could lose weight up to 9 times<br />
 faster than you would with regular exercise.</p>
<p> The concept is simple:  exercise smarter, not harder.</p>
